Assembly Patching or Assembly Modding is an operation done on the executable of the Wii U games emulated by Cemu. It uses a patch file in order to alter the PPC32 assembly of a game engine with any replacement or addition to it. The main way to do this right now is via Cemuhook and later versions of Cemu will support patching natively.

How to assembly patch
For details on patches.txt and its format look into the docs found inside Cemu hook's .zip.
This is done via the "graphic" packs system so you have to go via that road.
